alternatively, bilbo's impersonation was horrible, but pippin's impersonation of bilbo's impersonation was also horrible, but somehow matched the real gollum.

Iirc he gives the gollum impression under duress in order to make it seem like he has the one ring, keeping the orc from killing him and Merry. So he had to intuit that Gollum's ownership of the ring was hallmarked by him being that way.
